Our visit
On a sunny afternoon, my sister and I ventured to Albert Cuypstraat in Amsterdam’s lively De Pijp district. We were the first to arrive at Bisous, a new restaurant that's been causing quite a stir among the city’s food enthusiasts. The deep red awning and stylish entrance hinted at the blend of classic and modern awaiting us inside.
Entering Bisous, we were immediately struck by its vibrant interior. The design, crafted by JPDEMEYER&CO, features a sophisticated palette of deep reds, golds, and warm creams, accented with playful pops of pink. Mondrian-inspired fabrics cover the walls, adding a touch of artful sophistication. Whimsical red-lip-shaped lamps further enhance the chic atmosphere, creating a space that feels both trendy and timeless.
The thoughtful design elements immediately draw you in, and we couldn't resist snapping a few photos. The combination of the bold color scheme and artistic décor creates a vibrant yet cozy setting that makes you want to linger.
The food
The standout dish at Bisous has to be the clams from Zeeland, cooked with pastis and parsley. These were, without a doubt, some of the best clams I've ever tasted in Amsterdam. The clams were tender and the sauce was a revelation. Infused with the aniseed flavor of pastis and the freshness of parsley, the sauce was so delectable that we couldn't resist mopping up every last drop with the restaurant's delicious bread. The butter served alongside was rich and creamy, enhancing the flavors even further.
We sampled the toasts with tartare and eel, which proved to be delightful starters. The tartare was finely chopped and seasoned, offering a harmonious blend of textures and flavors. The eel added a smoky, slightly sweet contrast that complemented the tartare beautifully, making each bite a delightful experience.
For our main courses, we chose the seabass with a green herb sauce and the tournedos with a beaten pepper crust and cognac sauce. The seabass was a study in balance: light, flaky, and cooked to perfection, it was accompanied by a vibrant green herb sauce that added a fresh, aromatic dimension to the dish.
Then there was the tournedos. The beef was exceptionally tender, with a peppery crust that provided a satisfying crunch and a burst of flavor with each bite. The cognac sauce was rich and velvety, with a depth that elevated the dish to something truly exceptional. The interplay of the peppery crust and the smooth, slightly sweet cognac sauce created a memorable and indulgent dining experience.
